Ingredients

  • 🍗 2 cups cooked chicken, shredded or diced
  • 🧄 4 cups Alfredo sauce (store-bought or homemade)
  • 🍝 9 lasagna noodles, cooked
  • 🧀 2 cups shredded mozzarella cheese
  • 🧀 1 cup shredded Parmesan cheese
  • 🧈 1 tablespoon butter
  • 🧅 1 small onion, diced
  • 🍄 1 cup mushrooms, sliced (optional)
  • 🥬 1 cup spinach, chopped (optional)
  • 🌿 1 teaspoon Italian seasoning
  • 🧂 1/2 teaspoon salt
  • 🌶️ 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Sauté vegetables: In a skillet, melt butter over medium heat. Add diced onion and cook until translucent. Add mushrooms and spinach (if using) and cook until softened. Season with salt, pepper, and Italian seasoning. Remove from heat.
  • Prepare the filling: In a large bowl, mix the cooked chicken with 2 cups of Alfredo sauce and half of the mozzarella cheese.
  • Assemble the lasagna:
    • Spread 1/2 cup Alfredo sauce on the bottom of the baking dish.
    • Add a layer of lasagna noodles.
    • Spread 1/3 of the chicken mixture, then 1/3 of the sautéed vegetables.
    • Sprinkle with Parmesan cheese and a drizzle of Alfredo sauce.
    • Repeat layers until all ingredients are used, ending with a layer of Alfredo sauce topped with mozzarella and Parmesan cheese.
  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes, or until the cheese is golden and bubbly.
  • Cool slightly before serving. Garnish with fresh parsley if desired.

  • For extra creaminess, mix ricotta cheese into the chicken filling.
  • Substitute spinach with kale or omit for a simpler version.
