Description

Banana bread pudding is a comforting dessert that blends ripe bananas and stale bread with a rich custard base. This easy-to-make dish transforms simple ingredients into a delectable treat, perfect for using up leftovers and overripe bananas.

Ingredients

Scale
  • 4 cups cubed French bread, brioche, or sourdough
  • 3 ripe bananas, mashed
  • 2 cups whole milk or high-fat milk
  • 2 large eggs
  • 2 egg yolks
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger (optional)
  • 1 tablespoon dark rum (optional)
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Slice the Bread: Cut bread into 1-inch cubes.
  • Mash the Bananas: Mash ripe bananas until smooth and mix with cinnamon, nutmeg, and ginger.
  • Whisk the Eggs and Sugar: In a separate bowl, whisk together eggs, egg yolks, brown sugar, and white sugar until smooth.
  • Add the Milk: Gradually whisk in the milk to the egg mixture.
  • Combine Ingredients: Fold the mashed bananas into the custard. Pour the custard mixture over the bread cubes in a large mixing bowl, ensuring the bread is well-coated. Let it sit for 10 minutes.
  • Prepare Baking Dish: Grease a baking dish with butter or non-stick spray.
  • Assemble and Bake: Pour the mixture into the baking dish and bake for 45-50 minutes, or until golden brown and set. Cool for 15 minutes before serving.

Notes

  • For added flavor, stir in dark rum and vanilla extract before baking.
  • To prevent soggy pudding, use slightly stale bread and avoid oversoaking.
  • Serve warm with ice cream or a drizzle of caramel sauce.
