Description

Buckeye Brownie Cookies combine the rich, fudgy texture of brownies with the creamy sweetness of peanut butter and a chocolatey finish. Perfect for dessert lovers, these cookies feature a soft brownie base with a peanut butter ball in the center, topped with a luscious layer of melted semi-sweet chocolate.

Ingredients

Scale

For the Brownie Dough:

  • 1 box (19.5-ounce) fudge brownie mix
  • 2 teaspoons vanilla extract
  • 1 teaspoon cornstarch
  • ¼ cup butter, melted
  • 4 ounces cream cheese, softened
  • 1 egg

For the Peanut Butter Balls:

  • 1 cup powdered sugar
  • 1 cup creamy peanut butter

For the Chocolate Topping:

  • 4 ounces semi-sweet chocolate chips

Instructions

  • Preheat the Oven:
    • Preheat to 350°F (175°C). Line a baking sheet with parchment paper or leave it ungreased.
  • Prepare the Brownie Dough:
    • Mix the brownie mix, vanilla extract, cornstarch, melted butter, cream cheese, and egg in a bowl until smooth. The dough will be sticky.
  • Shape the Dough:
    • Scoop dough into 1-1.5 tablespoon balls and place on the prepared cookie sheet. Smooth edges to form a round shape.
  • Bake the Cookies:
    • Bake for 12 minutes or until set but still soft in the center.
  • Prepare the Peanut Butter Balls:
    • Mix powdered sugar and peanut butter, then roll into 1-inch balls.
  • Add Peanut Butter to Cookies:
    • Press a peanut butter ball into the center of each cookie while still warm. Let cool on the sheet for 5 minutes, then transfer to a wire rack.
  • Melt the Chocolate:
    • Melt chocolate chips in the microwave in 30-second intervals, stirring until smooth.
  • Top the Cookies:
    • Spoon about ½ tablespoon of melted chocolate over each cookie, covering the peanut butter ball. Allow to set completely.

Notes

  • Chill Dough: If dough is too sticky, refrigerate for 30 minutes.
  • Uniform Size: Ensure even-sized dough balls for consistent baking.
  • Cool Properly: Allow cookies to cool on the sheet before moving to a rack to firm up.
