Let’s be honest: Sometimes, “easy” recipes end up being… bland. Not these! This recipe is all about maximum flavor with minimal fuss. Plus, who doesn’t love a good taco night? And the “smashed” part? It’s a fun little twist that makes them extra crispy and satisfying.

- For the Chicken:
- 1 lb (500g) ground chicken (because who has time to chop?)
- 1 teaspoon chopped garlic (or 1 crushed garlic clove – whichever you have on hand!)
- 1 teaspoon mixed herbs (Italian seasoning works great)
- Salt and black pepper (to taste – don’t be shy!)
- For the Caesar Salad (enough for 3 tacos, double as needed):
- 1 small head of gem lettuce, chopped (Romaine works too!)
- 1–2 spring onions, sliced (adds a nice little zing)
- Fresh chives, chopped (because everything’s better with chives)
- 1 ripe avocado, sliced (creamy goodness!)
- Grated Parmesan cheese (the more, the merrier!)
- Your favorite Caesar dressing (store-bought is totally fine – we’re all about keeping it real)
- For the Topping:
- Crispy fried onions (you know, the kind you put on green bean casserole? They’re amazing here!)
- Small Tortillas.
Instructions
- Brown the Chicken: Heat a little olive oil in a pan over medium-high heat. Add the ground chicken, garlic, mixed herbs, salt, and pepper. Cook it, breaking it up with a spoon, until it’s nicely browned and cooked through. No pink allowed!
- Prep the Salad: While the chicken is cooking, chop up your lettuce, spring onions, and chives. Toss them in a bowl with the sliced avocado and a generous handful of Parmesan cheese.
- Dress It Up: Drizzle your Caesar dressing over the salad and give it a good mix. You want everything nicely coated, but not drowning. Taste and add more dressing if needed.
- Smash Time: Grab the chicken, placing a small amount between two pieces of grease proof paper. use a rolling pin to smash the checken together. Using a circular cutter, create small circles of chicken. Pan fry agin to warm and add a little crisp.
- Assemble the Tacos: Warm your favorite tortillas, add your smashed chicken, a dollop of chicken and then a scoop of creamy Caesar salad down the middle of each tortilla.
- The Finishing Touch: Sprinkle those crispy fried onions generously over the top. They add an amazing crunch!
Notes
- Spice it Up: If you like a little heat, add a pinch of red pepper flakes to the chicken while it’s cooking.
- Make it Ahead: You can cook the chicken in advance and store it in the fridge. Just reheat it before assembling the tacos. The salad is best made fresh, though.
- Don’t Overdress!: Nobody likes a soggy salad. Start with a little dressing and add more as needed.
- Leftover magic: Don’t worry if you have extra salad – it’s delicious on its own the next day!
