Ingredients
- 🐔 2 cups cooked, shredded chicken
- 🧅 1 small onion, chopped
- 🌽 1 cup corn (fresh, frozen, or canned)
- 🫘 1 can (15 oz) black beans, drained and rinsed
- 🍅 1 can (15 oz) diced tomatoes with green chilies
- 🌮 1 packet taco seasoning (or homemade)
- 🫗 4 cups chicken broth
- 🧄 2 cloves garlic, minced
- 🫑 1 small bell pepper, chopped (optional)
- 🧂 Salt and pepper to taste
- 🥑 Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, cilantro
Instructions
- In a large pot, sauté the onion, bell pepper, and garlic over medium heat until softened (about 3 minutes).
- Stir in the taco seasoning and cook for another minute to release the flavors.
- Add the chicken broth, diced tomatoes, black beans, and corn. Stir well.
- Add the shredded chicken and bring the soup to a simmer. Cook for 20 minutes, stirring occasionally.
- Taste and season with salt and pepper if needed.
- Serve hot with your favorite toppings like shredded cheese, avocado, and tortilla chips.
