- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 tsp vanilla extract

- 1 1/2 cups diced apples (e.g., Granny Smith or Honeycrisp)
- 1 tsp ground cinnamon
- 1/3 cup brown sugar
- Additional cinnamon and sugar for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream together granulated sugar and butter until smooth. Beat in eggs one at a time, then stir in vanilla.
- Gradually mix in dry ingredients alternating with milk. Fold in half the diced apples.
- Pour half the batter into the prepared loaf pan. Mix remaining apples with brown sugar and cinnamon; layer over the batter. Top with remaining batter.
- Sprinkle with a mix of cinnamon and sugar. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Let cool before slicing.
