    • 1 egg, beaten

  • Potato Casserole:
    • 1 (24-ounce) package Ore-Ida Steam n’ Mash Russet potatoes
    • 1 tablespoon butter or margarine
    • 1 (5-ounce) can evaporated milk
    • 1 tablespoon chopped fresh parsley
    • 1 teaspoon garlic powder
    • 1/2 cup bacon bits
    • 2/3 cup Mexican style shredded cheese mix
    • Salt and pepper to taste

Instructions

  • Preheat the Oven: Set to 375°F (190°C) and grease a 9-inch baking dish.
  • Prepare Meatloaf Mixture: Combine ground beef, onions, bread crumbs, BBQ sauce, egg, and chili powder. Press into baking dish and bake for 20-25 minutes.
  • Prepare Mashed Potatoes: Cook potatoes per package instructions, mash until smooth, and mix in butter, evaporated milk, parsley, and garlic powder. Season with salt and pepper.
  • Assemble Casserole: Spread mashed potatoes over cooked meatloaf, sprinkle bacon bits and cheese.
  • Broil to Finish: Broil for 3-5 minutes until cheese is melted and bubbly. Let rest before serving.
