Description

Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 medium carrots, sliced
  • 2 medium potatoes, cubed
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Prep: Chop all vegetables and cut beef into cubes.
  2. Combine Ingredients: In a crockpot, combine all ingredients, stirring to mix well.
  3. Cook: Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender and vegetables are cooked through.
  4. Serve: Remove the bay leaf, check seasoning, and serve hot.

Notes

  • For a thicker soup, mash some of the potatoes directly in the crockpot before serving.
  • This soup freezes well. Cool completely and store in freezer-safe containers for up to 3 months.
