- 1 lb beef stew meat, cut into cubes
- 4 cups beef broth
- 2 cups water
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 medium carrots, sliced
- 2 medium potatoes, cubed
- 1 cup frozen green beans
- 1 cup frozen corn
- 1 onion, chopped
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 bay leaf
Instructions
- Prep: Chop all vegetables and cut beef into cubes.
- Combine Ingredients: In a crockpot, combine all ingredients, stirring to mix well.
- Cook: Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender and vegetables are cooked through.
- Serve: Remove the bay leaf, check seasoning, and serve hot.
Notes
- For a thicker soup, mash some of the potatoes directly in the crockpot before serving.
- This soup freezes well. Cool completely and store in freezer-safe containers for up to 3 months.
