Instructions
- Prepare the Crab Cake Mixture:
- In a mixing bowl, combine 1 lb of fresh crab meat, 1/4 cup of mayonnaise, 1 tablespoon of mustard, 1/2 cup of bread crumbs, 1 beaten egg, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of Old Bay seasoning. Mix until well combined.
- Assemble the Egg Rolls:
- Lay an egg roll wrapper on a flat surface with one corner pointing towards you. Place about 2 tablespoons of the crab cake mixture in the center.
- Fold the bottom corner over the filling, then fold in the sides and roll up tightly.
- Brush the edges with beaten egg to seal. Repeat with remaining wrappers and filling.
- Fry the Egg Rolls:
- Heat oil in a frying pan to 350°F.
- Fry the egg rolls in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per side).
- Remove from oil and drain on paper towels.
