  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Old Bay seasoning

  • 12 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Oil for frying

Optional Add-ins:

  • 2 green onions, finely chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder

Instructions

  • Prepare the Crab Cake Mixture:
    • In a mixing bowl, combine 1 lb of fresh crab meat, 1/4 cup of mayonnaise, 1 tablespoon of mustard, 1/2 cup of bread crumbs, 1 beaten egg, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of Old Bay seasoning. Mix until well combined.
  • Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a flat surface with one corner pointing towards you. Place about 2 tablespoons of the crab cake mixture in the center.
    • Fold the bottom corner over the filling, then fold in the sides and roll up tightly.
    • Brush the edges with beaten egg to seal. Repeat with remaining wrappers and filling.
  • Fry the Egg Rolls:
    • Heat oil in a frying pan to 350°F.
    • Fry the egg rolls in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per side).
    • Remove from oil and drain on paper towels.

Notes

  • These egg rolls can be prepared in advance and fried just before serving.
  • To make a healthier version, you can bake the egg rolls at 400°F for 15-20 minutes until golden brown.
  • Serve with your favorite dipping sauces like tartar sauce, aioli, or sweet chili sauce.
