This dish is ideal for both busy weeknights and relaxing weekends, offering warmth, comfort, and satisfaction with every spoonful.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) mixed vegetables (corn, peas, green beans), drained
  • 1 can (15 oz) pinto or kidney beans, drained and rinsed
  • 2 cups beef broth
  • 1 can (10.5 oz) condensed tomato soup
  • 1 tsp chili powder (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked; drain and transfer to a crockpot.
  2. Add diced tomatoes, mixed vegetables, beans, beef broth, tomato soup, chili powder, salt, and pepper to the crockpot. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors have melded together.
  4. Serve warm with your choice of toppings and sides.

Notes

  • For a lighter version, substitute ground beef with ground turkey or chicken.
  • Feel free to customize the soup by adding different beans or vegetables.
  • If the soup is too thick, adjust by adding more beef broth until desired consistency is reached.
