Description

Egg Drop Soup is a classic Chinese dish known for its simplicity and comforting flavors. It features silky ribbons of egg in a clear, savory broth, often enhanced with subtle seasonings and garnishes like green onions.

Ingredients

Scale
  • 4 cups chicken broth
  • 3 large eggs
  • 1/4 teaspoon ground white pepper
  • 1/2 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 2 green onions, thinly sliced
  • Salt to taste

Instructions

  1. Heat the chicken broth in a saucepan over medium-high until it simmers.
  2. Mix cornstarch and water in a bowl until smooth to create a slurry.
  3. In another bowl, whisk the eggs with white pepper and sesame oil.
  4. Gradually pour the egg mixture into the simmering broth, stirring continuously in a circular motion to form egg ribbons.
  5. Blanch green onions in boiling water for 30 seconds, then drain.
  6. Stir the cornstarch slurry again, add to the soup, and stir until slightly thickened.
  7. Season with salt, taste, and adjust as necessary.
  8. Serve hot, garnished with blanched green onions.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Adjust the amount of cornstarch based on desired soup thickness.
  • Optionally, add a pinch of turmeric or yellow food coloring for color
