Instructions
- Prepare the Strawberries: In a large bowl, mash the strawberries using a potato masher to your desired consistency.
- Cook the Jam: Transfer the mashed strawberries to a large saucepan. Add sugar and lemon juice. Stir over low heat until the sugar is dissolved.
- Boil: Increase the heat to high and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220°F (104°C) on a candy thermometer.
- Jar: Pour the hot jam into sterilized jars, leaving 1/4 inch of headspace. Wipe the rims clean, and seal with lids and bands.
- Process: Process in a water bath canner for 10 minutes.
