Instructions
- Cook the Bacon: In a large pot, cook diced bacon until crispy. Remove and set aside, leaving the drippings in the pot.
- Sauté Onions and Garlic: Add chopped onion to the pot and sauté until translucent. Add minced garlic and sauté until fragrant.
- Add Broth and Potatoes: Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add Cabbage and Carrots: Add shredded cabbage, sliced carrots, bay leaf, dried thyme, and black pepper. Simmer for another 15-20 minutes until vegetables are tender.
- Optional Cream Addition: Stir in heavy cream if desired and heat through without boiling.
- Season and Garnish: Adjust seasoning with salt and pepper, remove bay leaf, and garnish with cooked bacon and chopped parsley before serving.
