Ingredients
- Chicken breast: 2, cut into bite-size pieces
- Sun-dried tomatoes: 1/2 cup
- Garlic: 3 cloves, minced
- Heavy cream: 1 cup
- Parmesan cheese: 1/2 cup, grated
- Chicken stock: 1/2 cup
- Pasta: 8 ounces (penne or preferred type)
- Seasoning: Salt, pepper, dried oregano, and red pepper flakes to taste
- Basil: Fresh, for garnish
- Olive oil: 2 tablespoons
Instructions
- Cook the Chicken
Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and oregano. Sear for 4-5 minutes per side until golden brown and cooked through. Remove and set aside. - Prepare the Sauce
In the same skillet, add a splash of chicken stock to deglaze the pan. Stir in sun-dried tomatoes and garlic. Sauté for 1-2 minutes until fragrant. - Add Cream and Parmesan
Pour in heavy cream and chicken stock, then stir in parmesan cheese. Add a pinch of red pepper flakes. Simmer the sauce on medium-low heat for 3-5 minutes until it thickens slightly. - Cook the Pasta
Boil pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain. - Combine and Serve
Return the chicken to the skillet and add the cooked pasta. Toss everything together until well-coated in the creamy sauce. Adjust the consistency with reserved pasta water if needed. Garnish with fresh basil and additional parmesan. Serve immediately.
Notes
- For extra flavor, you can add spinach or mushrooms to the sauce.
- Substitute chicken thighs for a richer flavor or use rotisserie chicken for convenience.
