Ingredients

Scale
  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 2 cups old-fashioned oats (or gluten-free oats)
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup butter, cubed (or vegan butter)
  • 3/4 cup peanut butter
  • 1 (14 oz) can sweetened condensed milk (or plant-based condensed milk)
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips (or dairy-free chocolate chips)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
  • Mix dry ingredients: Combine flour, oats, brown sugar, salt, and baking soda in a large bowl.
  • Add butter: Mix in cubed butter until the mixture is crumbly.
  • Prepare the base layer: Press the majority of the oat mixture into the baking dish, reserving 1 1/2 cups.
  • Mix peanut butter layer: Stir together peanut butter, condensed milk, and vanilla extract in a medium bowl.
  • Assemble the bars: Spread the peanut butter mixture over the oat layer and sprinkle with chocolate chips.
  • Top and bake: Add the reserved oat mixture on top, press down lightly, and bake for 30 minutes until golden.
  • Cool and serve: Allow to cool completely before slicing into bars.

Notes

  • For gluten-free: Use certified gluten-free oats and a gluten-free flour blend.
  • For vegan: Substitute butter with vegan butter, chocolate chips with dairy-free options, and condensed milk with plant-based condensed milk.
