- 🍬 1/4 cup brown sugar
- 🍬 1/4 cup granulated sugar
- 🧈 1/4 cup unsalted butter, cold and cubed
- 🍂 1/2 teaspoon cinnamon
Instructions
- Preheat the oven:
- Set the oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
- Make the cake batter:
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then add vanilla extract and sour cream.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Prepare the peach layer:
- Toss the sliced peaches with cinnamon and sugar. Set aside.
- Make the crumb topping:
- In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
- Assemble the cake:
- Spread the cake batter evenly into the prepared pan.
- Layer the peaches evenly on top of the batter.
- Sprinkle the crumb topping over the peaches.
- Bake:
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean and the topping is golden brown.
- Cool and serve:
- Let the cake cool for at least 10 minutes before slicing. Serve warm or at room temperature.
Notes
- Use fresh peaches when in season for the best flavor. Canned or frozen peaches work well, too—just be sure to drain them thoroughly.
- Add a drizzle of vanilla glaze or a scoop of vanilla ice cream for extra indulgence.
- Store leftovers in an airtight container for up to 3 days.
