Description

This Southern Peach Crumb Cake is a buttery, tender cake topped with juicy peaches and a cinnamon-sugar crumb topping. 🍑✨ Perfect for brunch, dessert, or a sweet snack, it’s a comforting classic that highlights the flavors of fresh or canned peaches.

Ingredients

Cake Batter:

  • 🧈 1/2 cup unsalted butter, softened
  • 🍬 1 cup granulated sugar
  • 🥚 2 large eggs
  • 🌿 1 teaspoon vanilla extract
  • 🥛 1/2 cup sour cream or plain yogurt
  • 🌾 1 1/2 cups all-purpose flour
  • 🥄 1 teaspoon baking powder
  • 🧂 1/4 teaspoon salt

Peach Layer:

  • 🍑 2 cups sliced peaches (fresh, frozen, or canned, drained)
  • 🍂 1/4 teaspoon cinnamon
  • 🍬 1 tablespoon granulated sugar

Crumb Topping:

  • 🌾 1/2 cup all-purpose flour
  • 🍬 1/4 cup brown sugar
  • 🍬 1/4 cup granulated sugar
  • 🧈 1/4 cup unsalted butter, cold and cubed
  • 🍂 1/2 teaspoon cinnamon

Instructions

  • Preheat the oven:
    • Set the oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
  • Make the cake batter:
    • In a large bowl, cream together the butter and sugar until light and fluffy.
    • Beat in the eggs, one at a time, then add vanilla extract and sour cream.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Prepare the peach layer:
    • Toss the sliced peaches with cinnamon and sugar. Set aside.
  • Make the crumb topping:
    • In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  • Assemble the cake:
    • Spread the cake batter evenly into the prepared pan.
    • Layer the peaches evenly on top of the batter.
    • Sprinkle the crumb topping over the peaches.
  • Bake:
    • Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean and the topping is golden brown.
  • Cool and serve:
    • Let the cake cool for at least 10 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use fresh peaches when in season for the best flavor. Canned or frozen peaches work well, too—just be sure to drain them thoroughly.
  • Add a drizzle of vanilla glaze or a scoop of vanilla ice cream for extra indulgence.
  • Store leftovers in an airtight container for up to 3 days.
