With vibrant colors and fresh fruity flavors, Strawberry Banana Bark is a fun way to satisfy your sweet tooth while nourishing your body.

Ingredients

Scale
  • 2 cups plain Greek yogurt (full-fat or low-fat)
  • 2 tablespoons honey or pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 ripe banana, sliced into thin rounds
  • 1 cup fresh strawberries, hulled and thinly sliced
  • ¼ cup granola (gluten-free if needed)
  • 2 tablespoons unsweetened shredded coconut (optional)

Instructions

Step 1: Prepare Yogurt Mixture

In a mixing bowl, combine Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and evenly blended.

Step 2: Spread Onto Baking Sheet

Line a baking sheet or pan with parchment paper. Using a spatula, spread the yogurt mixture evenly onto the prepared parchment, about ¼-inch thick.

Step 3: Add Fruit and Toppings

Arrange sliced bananas and strawberries evenly over the yogurt layer. Gently press the fruit pieces into the yogurt. Sprinkle granola and shredded coconut evenly over the top.

Step 4: Freeze the Bark

Place the baking sheet in the freezer for at least 3–4 hours or until completely frozen.

Step 5: Break and Serve

Remove the pan from the freezer, carefully lift the parchment paper out, and transfer the frozen bark onto a cutting board. Using your hands or a sharp knife, break or cut the bark into irregular pieces. Serve immediately or transfer to an airtight container and store in the freezer.

Notes

  • Variations: Feel free to experiment with toppings by adding nuts, chia seeds, mini chocolate chips, or dried fruit.
  • Sweetness Adjustments: You can adjust sweetness levels by using more or less honey or maple syrup, depending on your preference.
