Description
Zuppa Toscana is a creamy, hearty Italian soup popularized by Olive Garden. It features Italian sausage, potatoes, kale, and a rich, savory broth, making it a comforting dish perfect for any occasion. This homemade version is simple to prepare and offers variations for keto and vegetarian diets.
Ingredients
Scale
- 1 pound Italian sausage (mild or spicy)
- 4 cups chicken broth
- 2 large russet potatoes, thinly sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups fresh kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional for spice lovers)
Instructions
- Cook the Sausage: Heat a large pot over medium heat, crumble the sausage, and cook until browned (5-7 minutes). Drain excess fat and set the sausage aside.
- Cook the Vegetables: In the same pot, sauté onions and garlic until soft (3 minutes), then add potatoes and stir for 2 minutes.
- Add Broth and Simmer: Pour in the chicken broth, bring to a boil, then reduce to a simmer for 10-15 minutes until the potatoes are tender.
- Add Kale and Cream: Stir in kale and cook until wilted. Add heavy cream and simmer for another 5 minutes.
- Serve: Return the sausage to the pot, season with salt, pepper, and red pepper flakes (optional). Serve hot with bread.
Notes
- For a keto-friendly version, replace the potatoes with cauliflower florets.
- For a vegetarian option, use vegetarian sausage and vegetable broth.
- You can adjust the spice level by using hot Italian sausage or adding more red pepper flakes.
