Instructions

  1. Cook the Sausage: Heat a large pot over medium heat, crumble the sausage, and cook until browned (5-7 minutes). Drain excess fat and set the sausage aside.
  2. Cook the Vegetables: In the same pot, sauté onions and garlic until soft (3 minutes), then add potatoes and stir for 2 minutes.
  3. Add Broth and Simmer: Pour in the chicken broth, bring to a boil, then reduce to a simmer for 10-15 minutes until the potatoes are tender.
  4. Add Kale and Cream: Stir in kale and cook until wilted. Add heavy cream and simmer for another 5 minutes.
  5. Serve: Return the sausage to the pot, season with salt, pepper, and red pepper flakes (optional). Serve hot with bread.
