  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 can (21 oz) cherry pie filling
  • 1/2 cup slivered almonds

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  4. Gradually add flour and salt to the creamed mixture.
  5. Spread 3 cups of batter in a greased 15x10x1 inch baking pan.
  6. Spread cherry pie filling over batter.
  7. Drop remaining batter by teaspoonfuls over filling.
  8. Sprinkle with slivered almonds.
  9. Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean.
  10. Cool on a wire rack and cut into bars.

  • For a lighter texture, sift the flour before adding it to the mixture.
  • If desired, substitute cherry pie filling with raspberry or apricot jam for a twist on the original recipe.
