Description

A comforting and hearty meal that encapsulates the essence of Eastern European cuisine, this recipe combines Polish sausage, tangy sauerkraut, and hearty gold potatoes, all simmered to perfection in a crockpot. It’s an easy-to-make dish that’s perfect for a satisfying family dinner or a cozy meal on a chilly day. The blend of flavors and textures makes this a crowd-pleaser that’s both nourishing and warming.

Ingredients

Scale
  • 56 medium gold potatoes, cut into large chunks
  • 16 oz. sauerkraut
  • 1 ½ lb. Polish sausage, cut into large pieces
  • ½ cup chicken broth
  • 1 tsp. caraway seeds
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Spread the sauerkraut evenly at the bottom of the crockpot.
  2. Layer the potatoes on top of the sauerkraut, followed by the Polish sausage pieces.
  3. In a small bowl, whisk together the chicken broth, caraway seeds, and bay leaf. Pour this mixture over the ingredients in the crockpot.
  4. Season with salt and pepper according to taste.
  5. Secure the lid on the crockpot and set it to cook on high for 4 hours.
  6. Once done, stir the contents well before serving to ensure the flavors are evenly distributed.

Notes

  • The caraway seeds and bay leaf add depth to the dish’s flavor profile, complementing the sauerkraut’s tanginess.
  • Adjust the salt and pepper seasoning after cooking, as the sauerkraut and sausage already contain salt.
