Description

This Easy Stuffed Pepper Casserole transforms the classic components of stuffed peppers—ground beef, bell peppers, and rice—into a simplified, one-dish bake. It’s a hearty, comforting meal that’s perfect for busy evenings, offering both ease and a burst of flavor.

Ingredients

Scale
  • 1 pound ground beef
  • 3 bell peppers (various colors), diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with onions and garlic; drain excess fat.
  3. Add bell peppers, rice, beef broth, diced tomatoes, salt, pepper, and Italian seasoning. Bring to a boil, then simmer uncovered until rice is cooked, about 25 minutes.
  4. Transfer the mixture to a baking dish, top with cheeses, and bake for 15-20 minutes until cheese is bubbly and golden.
  5. Let stand for 5 minutes before serving.

Notes

  • For a lighter version, substitute ground beef with ground turkey or a plant-based alternative.
  • Can be made ahead and refrigerated before baking for convenience.
