Ingredients
Scale
- 1 whole chicken (about 4 pounds)
- 8 cups water
- 2 bay leaves
- 1 onion, peeled and halved
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste

- Fresh parsley, for garnish
Instructions
- Cook the Chicken: In a large pot, combine chicken, water, bay leaves, and onion. Bring to a boil, then simmer for about 1 hour.
- Prepare the Chicken: Remove the chicken, let cool, then shred the meat, discarding the bones.
- Simmer the Vegetables: Return the shredded chicken to the pot. Add carrots, celery, and garlic. Season with salt and pepper and simmer until vegetables are tender, about 30 minutes.
- Cook the Noodles: In a separate pot, cook noodles until al dente; drain.
- Serve: Ladle soup over noodles and garnish with parsley.
Notes
- Skim off any foam that forms on the top during the initial boiling of the chicken for a clearer broth.
- Homemade stock can be made in advance and frozen for future use.
